Cider and Québec Crème de Cassis Poched Pears

A Québec version of a French classic. This recipe will fill your kitchen with delightful spicy aromas. Try this with the Flemish Beauty pears, grown in Québec.

4 Servings

4 pears ripe but firm

125 gr sugar

175 ml Crème de Cassis from Québec

200 ml McKeown Draft Cider

15 ml fresh lemon juice

Orange peel

1/2 vanilla pod

1 cinnamon stick

2 cloves

 

Peel the pears leaving the stems. Combine crème de Cassis, cider and sugar in a saucepan, heat, stirring often to dissolve sugar. Add lemon juice, orange peel and spices. Place pears over the sirup and let it cook on low heat during 30 minutes. Remove the saucepan from the heat and let the pears cool down in the sirup.

To serve : lay down the pears on a plate or in a goblet, strain the sirup and pour it over the pears.
